This Month's Recipe
A Simple Vinaigrette
2 cups cilantro leaves
2 tablespoons red wine vinegar
1 tablespoon lime juice
1 tablespoon minced garlic
1 tablespoon finely chopped red onion
1 tablespoon honey
1/2 cup olive oil or 10% blend
salt and freshly ground black pepper (to taste)
Combine the cilantro leaves, vinegar, fresh lime juice, garlic, onion, and honey in a blender and puree. With the motor running, slowly add the oil until it is emulisfied. Season to taste with salt and pepper. Bring to room temperature before serving.
